Let’s Chow Fellow Derek Suhre of Calavera Coffee Interviewed at Red White & Boca Veterans Day Celebration
The event featured speakers, live music, a car and motorcycle show and food trucks. The Let's Chow food truck operated by Calavera Coffee was one of the businesses offering free items to veterans.
"It's a small piece, it’s very, very small compared to what they did obviously but we are all trying to contribute as best we can,” said Calavera Coffee founder and veteran Derek Suhre.

Let’s Chow founder Jordan Foley & Fellows Luis and Olivia Surla featured in Insider Business
A successful food truck working with Let's Chow is San Diego's Joselle's Kitchen, run by Luis Surla, a combat-disabled veteran, and his wife, Olivia. They serve up authentic Filipino food, such as their popular homemade lumpia, using recipes from Olivia Surla's mom.
The Surlas harness technology, including collective cloud-based software, apps, and hardware to smoothen their processes and elevate their business. Luis Surla said that Toast, in particular, "improves order accuracy and enhances service speed." For example, restaurant-grade hardware allows the line cook at the griddle to see orders on a second screen. The order disappears upon delivery, making order-tracking easier in fast-paced environments.
Georgetown Magazine, Spring 2022: Serving up support for veterans
In 2019, Jordan Foley (L’21) was studying at Georgetown Law when he received devastating news: a friend and fellow Navy veteran had died by suicide while struggling with debts as he launched his startup business.
“After looking into it, I asked, why weren’t there resources available for him? Did he not have support? How can we reduce those startup fail rates?” he says. “I knew there were many nonprofits helping veterans start businesses, but I wanted to help them longterm. I wanted to honor my friend.”
